Beet Juice history
Beet juice have been used as medicine and nutrition going back to ancient Greek and Roman times.
If several thousand years ago, beet grows wild on the Mediterranean shores of the Atlantic, today is cultivated in almost all the world for its nutritional and therapeutic qualities.
Beetroot is the staple food of traditional Russians, often in the form of beet soup. This could be the trick behind their long lives. In addition to long life, beetroots are natural aphrodisiacs and fertility herb.

Beetroot properties
Beetroot is a rich vegetable that belongs to the family of chenopods. It is better when taken raw, and juicing is the fastest way to get a whole beet down your gullet.
A cup of beet juice is enough to supply you with folate, manganese, dietary fibre, potassium, vitamin C, iron, magnesium, phosphorous, copper, and a small percentage of calories.

You will need:
- vegetable brush(optional)
- beetroot with greens
- sharp knife
- cutting board
- juicer
Steps:
- Clean the beetroot, stem and leaves by gently rubbing them under cool running water; scrub the beet with a vegetable brush if it’s particularly dirty
- Remove the beet top by cutting the stem off about 1/2 inch from the root
- Cut the beet into pieces that are small enough to fit into the hopper of your juicer
- Put the beetroot pieces, stem and leaves through the hopper to juice them
- Mix the beet juice with the juice of other vegetables and fruits, such as carrots, spinach, garlic, parsley, apples and others.
- Turn the machine off; check the pulp receptacle. If the pulp is still fairly wet, you can run it through the hopper a second time
- Serve immediately for optimal freshness and nutritional content. Beet juice will keep in the refrigerator for up to three days.

Tips:
- The best beetroot for juicing is the one with a hard and crunchy root.
- Make sure that it has a deep red pigment, and a smooth skin.
- Study it carefully to ensure that it is free from spoilage. Spoilage is marked by tenderness of the beet, bruises, wetness, tough and aged roots.
- Avoid beets that have stayed in the refrigerator for more than three weeks.
- After selecting enough beets for juicing, thaw them properly to prepare them for juicing. Thawing will give them a soft texture, and thus make them easier to juice.
- Wear your gloves and wash the beets thoroughly in running water. Gloves will protect you from the red stains of the beet. However, you can always wash your hands with lime solution in order to remove red beet stains.
- Be careful not to bruise the beet, as this may make it bleed and lose its value.
- It is important to get the proportions correct with some vegetables and most juicing experts recommend keeping a 1:4 ratio of beets other vegetables.

For example 1 beet for every 4 carrots, 1/4 beet for every carrot. Select a medium sized carrot, garlic or ginger and wash it in the same way. These ingredients add value to your beet juice.
In addition, it is important to note that pure beetroot juice can be harmful to your health. In order to protect your vocal cords, maintain your pulse rate and avoid beet-related chills, always add one or more of the above vegetables.
Beetroot Juicing and Blending
Ideally, you can blend it with any vegetable, but avoid calcium-rich veggies because calcium reacts negatively with the oxalic acid found in beets. To obtain the maximum benefits, you can also include green leaves of beetroots in your recipe.
The greens from beets can be used in your recipes and contains many important minerals. Try juicing both with and without the greens to see which taste you prefer.
- Do not remove the outer peel of the beetroot, since it contains essential nutrients.
- Cut the beet longitudinally into four equal parts.
- Select one piece and store the remaining three in the refrigerator.

You need to be careful with beets if you have some medical conditions such as gout, osteoporosis, kidney stones and rheumatoid arthritis. Nevertheless, never juice more than a half piece of beet.
Beet Juice Need to Serve Fresh
Beet juice is better when served fresh, and therefore you need to prepare just enough for that day.
- Slice your beetroot and the other recipes into small pieces and put them in separate dishes.
- It is advisable to grind the ginger into a paste. Slicing increases the surface area of your vegetables, thus giving you the opportunity to extract all the nutrients.
- Put your carrot slices in the juicer, followed by the beetroot slices. Add a spoonful of ginger paste and a small portion of garlic. Stir thoroughly to ensure that your juice is properly blended.
- Pour your juice in an airtight container to protect your juice against oxidation. As soon as the beet juicing process is over, take your juicer to the kitchen and clean it immediately.
You can take beet juice within a period of 24 hours after juicing. In this case, refrigeration will be necessary. Remember that beet juice is a blend of raw vegetables that requires to be served the same way you serve a raw vegetable diet.
Serve it fresh, about an hour before or after meal time. Morning hours are the best time for taking beet juice, since this is the perfect time for cleansing your organs.

Pink or Red Urine
Beet greens contain high levels of oxalate. The substance also occurs in the root, but at lower levels. If you have kidney stones or are on a low-oxalate diet, you should avoid over-consumption of beetroots.
You may pass pink or red urine after consuming beet juice. This is not a serious condition, and thousands of Americans are living with it. However, lab tests have established that this could be a sign of mild malfunctioning of your body.
Medics call it “beeturia”, and therefore you may have to visit a physician to establish whether your iron metabolism is perfect.

Beet Recipe
Beet recipe – Street Beet:
- 4 Carrots
- 1/2 Cucumber
- 1 Beet
Wash all vegetables. Cucumbers can be covered in a layer of wax, if so peel before juicing. Peel the beets also to avoid the bitterness of the skin. Cut the tips off of the carrots. Slice and quarter your beets and cucumber.
This recipe keeps this proportion (1 beet for every 4 carrots). It also contains cucumber which is very cooling and refreshing when juice solo or in combination with other vegetables. Long used as a treatment for eyes in solid form the juice is said to be very good for your skin.
Beet Juice – Tips and Warnings
- drinking large quantities of beet juice may result in an upset stomach. To avoid this, start with a small amount of beet juice, such as 1 oz., and mix it with other fresh juices
- drink the juice as soon as possible after juicing to gain the most benefits and avoid vitamin and nutrient loss
- don’t drink beet juice on its own and always dilute it with other juices. It can cause a number of problems including increased heart rate, dizziness and other side effects
- combination ideas include beetroot with apple, carrot, lime and ginger, beetroot with cucumber and pineapple and beetroot with carrot, celery and garlic
- if cutting the beets stains your cutting board or fingers red, use lemon juice to remove the stains

Due to beneficial substances rich in body, beet should not miss the daily menu. Unlike other vegetables, beets vital substances are not destroyed by heat treatment. I recommended to be consumed raw, as salad or juice.
